Today will kick off the month with a wonderful and richly flavored creamy potato dish. Enjoy!!
Ingredients:
- 1 1/2 cups sour cream
- 1 can cream of potato soup
- 2 cloves garlic, minced
- 2 1/2 pounds of red potatoes, thinly sliced
- 1 cup sharp white cheddar cheese
- 2 Tablespoons of fresh chives, chopped
Directions:
- Heat oven to 350 degrees.
- Mix first 3 ingredients in a large bowl. Add potatoes and toss to coat. Spoon into 9x13 baking dish, sprayed with cooking spray. Top with cheese.
- Bake 55 minutes, or until potatoes are tender.
- Sprinkle with chives and serve.
